  • Mince the cabbage far finer than feels reasonable. Coarse slaw slides straight out of a small roll on the first bite.
  • An hour in the fridge is the minimum. Fresh slaw tastes raw and sharp; rested slaw tastes like the one in the restaurant.
  • Assemble at the last moment. This sandwich has a shelf life measured in minutes.
