KFC Cole Slaw costs $2.99 and carries 170-640 cal. It is the sweetest slaw of any major chain and the most finely cut: minced almost to a rubble rather than shredded, which is why it eats with a spoon rather than a fork. The dressing is mayonnaise, sugar and vinegar in roughly that order of prominence, and the sugar is the reason people either reach for it every visit or never order it twice.

What it does on a tray is more useful than what it tastes like on its own. Cold, acidic and sweet against hot, salty and fried is the reason slaw sits next to fried chicken everywhere it is sold, and it works harder against the Nashville Hot Chicken Sandwich than any drink does. At $2.99 it is the same price as every other standard side on the Sides menu. It is also one of the few genuinely vegetarian orders on the KFC menu.

The two things that make this taste like KFC rather than like a deli slaw are the cut and the rest. Mince the cabbage far finer than looks right, then leave the dressed slaw in the fridge for at least four hours. Fresh slaw tastes raw and sharp; rested slaw tastes like the tub.

  • Finer than you think is right. If it looks like a deli slaw, keep going.
  • Four hours is the floor and overnight is better. This is a make-ahead side by nature.
  • Season the dressing, never the cabbage. Salted cabbage weeps and the slaw goes watery.

Variations

  • Cut the sugar by a third for a version closer to a British slaw.
  • Add celery seed, which several Southern slaw recipes use and which suits fried chicken.
  • Use half red cabbage for colour, accepting that it will tint the dressing pink.

Yes, and it is one of the few things on the menu that is without qualification. No chicken stock, no gravy, no shared fryer.

Sugar is the second ingredient in the dressing after mayonnaise. That sweetness is the point, because it is set against salty fried chicken rather than eaten on its own. It works particularly well against the Nashville Hot Chicken Sandwich.

So it can be eaten with a spoon and so it sits inside a sandwich without falling out. A coarse slaw would do neither, and KFC sells it inside a Snacker as well as beside chicken.
