KFC Potato Wedges cost $2.99 and carry 320-760 cal across the individual and large portions. Thick wedges, skin on, seasoned and fried, and the item with the most loyal following of anything on the Sides menu. KFC pulled them from the US menu once and brought them back after enough people complained, which is not something that happens to a side dish very often.

They are softer inside than Secret Recipe Fries and hold more potato per portion, which makes them the better choice next to gravy and the worse one for a long drive home. The seasoning is peppery rather than savoury, closer to a chip shop than to the chicken coating. At $2.99 they sit at the standard side price, one step below the fries. Both are vegetarian in themselves and both share fryers with chicken.

Tips

  • Six minutes of parboiling, not more. Overboiled wedges collapse in the fryer and you will be fishing out fragments.
  • Let them dry properly before seasoning. Wet potato takes the seasoning off in the oil.
  • Black pepper, not white, on wedges. This is the one KFC side where the pepper is meant to be noticed.

Variations

  • Bake at 425F for 35 minutes on a rack for a much lighter version.
  • Double the cayenne for a hot wedge.
  • Serve with the brown gravy, which is the traditional pairing outside the US.
